
Ceviche de peixe branco com sopa fria de melão e coalhada seca
This cold melon soup is a kind of gazpacho, very delicate, which matches very well with the citrus flavor of ceviche. It is the marriage of Mediterranean and Latin flavors in one dish!

- 2 xicaras de melão em cubos
- 2 colheres de coalhada seca
- ½ dente de alho
- 2 xicaras de filé peixe branco (robalo, namorado ou tilápia) laminado
- suco de um limão + raspas de um limão
- 1 pimenta dedo de moça laminada (com semente pra quem gosta picante)
- ½ cebola roxa laminada finamente
- 1 colher (sobremesa) talos de coentro laminados finamente
- 1 colher (café) de gengibre ralado
- 1 colher (sobremesa) de azeite
- Folhas de coentro
- 1/3 de xicara de micro cubos de melão temperados com pimenta em pó e azeite

Cold Melon Soup
I use dry curd since the melon is already very liquid, if we use fresh curd we will have a very watery soup.
You can buy the ready-made curd, or make it at home. To make at home, you place on a clean dish towel 2 cups of fresh curd or 2 cups of plain yogurt, close the dish towel in a bundle and tie it at the sink tap during the night, allowing it to drain. In the morning the dry curd is ready to use.
Beat the melon, dry curd and garlic in a blender, season with salt and pepper to taste.

Mix the fish with the coriander, ginger, pepper and lemon juice, marinate between 15 and 30 minutes in the refrigerator. Season with salt, oil and add the red onion, mix well and just serve.
Garrison
Mix the melon cubes with the oil and the dried pepper.
Separate the coriander leaves and lemon zest for assembling the dish.
Assembly of the plate
Arrange the cold soup in a deep dish, and in the middle arrange the ceviche. Sprinkle with lemon zest, add the coriander leaves to the ceviche and the spicy melon cubes in the soup.
