
Witlof with pear, blue cheese and walnuts
This classic flavour combination brings together the bitterness of witlof and blue cheese & the sweetness of pear, all in one salad. Perfect as a starter, when having friends over for dinner.

- 2 green witlof, leaves separated
- 2 pears, sliced lengthways
- 100g blue cheese ( Roquefort), crumbled
- 60g walnuts
- 2 tbs white wine vinegar
- 2 tbs walnut oil

Arrange the witlof, pear and blue cheese on serving plates.
Combine the vinegar and walnut oil and season with salt and pepper.
Drizzle oil mixture over the salad leaves.
Sprinkle with walnuts and serve immediately.
