
Mediterranean salad with chorizo

- 1/2 head of Salanova Butterhead (Salad Royale)
- 1 red sweet pointed pepper
- 250 g small tomatoes (cherry or cocktail)
- 150 g chorizo
- 2 tsp lemon juice
- 3 tsp virgin olive oil
- 1 tsp finely chopped rosemary
- 1 tsp grated lemon rind
- 1 clove of garlic, chopped
- Salt & pepper
- 100 g Parmesan cheese

- Use a Salanova corer or knife to cut half of the Salanova Butterhead.
- Wash the leaves and place in a nice bowl (or salad plate). Finely dice the chorizo.
- Cut the pepper into long strips and cut the cherry tomatoes in half.
- Scatter these over the lettuce.
- For the dressing mix all ingredients and drizzle on top.
- Top off with the Parmesan cheese.
- Serve with slices of seasoned baguette.
