
Broccoli Salad with Raisins and Garden Peas
I love to make this salad on the go, it keeps really well in a container, the sunflower seeds add such a nice texture to it.

- 600 grams Broccoli florets
- 125 grams Raisins
- 125 grams Sunflower seeds
- 250 grams of bacon
- 250 grams red onion, sliced into rings
- 250 grams garden peas
- 6 Tablespoons of mayonnaise
- 1 Tablespoons of yoghurt
- 2 Tablespoons of white wine vinegar
- 1 Tablespoon of sugar
- Salt and Pepper to taste.

Brown bacon and remove excess liquid. Place a large pot of salted water on heat to boil. Add broccoli and blanch them for 3-4 minutes. Drain and rinse with cold water. Combine the broccoli, red onion, garden peas, bacon (diced), raisins and sunflower seeds in a large serving bowl. Dressing: Whisk together mayonnaise, yoghurt, sugar and white wine. Add the dressing to the salad, toss and serve.
Serves 4 as a side salad.
