
Broccoli salad
This broccoli salad is best served with BBQ fish or chicken.

- 2 1/2 cups broccoli florets
- 1/2 red onion, finely diced
- 1/2 cup raisins
- 1/2 cup slithered almonds
- 1/2 cup sunflower seeds
- 1 cup cashews (or pecans)
- 1/4 cup fresh lemon juice
- 2 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 3/4 cup water
- 1 shallot, chopped
- 1 clove garlic
- 2 tablespoons honey
- 2 tablespoons wholegrain mustard
- Salt to taste

In a food processor, blend broccoli florets until roughly chopped. Pour into a serving bowl.
Add red onion, raisins, almonds, and sunflower seeds and combine.
Dressing
In a food processor, blend all dressing ingredients.
Add to bowl. Mix and serve.
