
Cantaloupe with parma ham, feta and roasted pumpkin seeds
This is the kind of food I enjoy making and like to eat after a long day of work or study. Easy, fast, fun and healthy as well!

- Half a cantaloupe melon (rockmelon)
- 60 grams of parma ham (thinly sliced prosciutto would be my first choice if available)
- A handful of roasted pepitas (pumpkin seeds)
- 40 grams of feta cheese
- 120 grams of mixed lettuce leaves
- 1 tablespoon of balsamic vinegar
- 2 tablespoons of olive oil
- some freshly ground black pepper

Whisk together the dressing of olive oil and the vinegar with some ground black pepper to taste and in a bowl gently toss the dressing through the lettuce leaves with your hands.
Roast the pepitas and slice the cantaloupe into small pieces. Place the lettuce with the dressing on a serving plate, add the melon then the ham. Finish with a sprinkle of the roasted pepitas and crumbled feta over the top.
