
Bell pepper fajitas with chicken
One of our favorite quick meals: these fajitas with sweet bell peppers. You might typically use regular bell peppers, but they are just as delicious with sweet bell peppers. Plus, the preparation is super easy: just spread the vegetables, chicken, and spices over a baking tray and let the oven do the work. Serve with your favorite toppings and you have a real party on the table!

- 800 grams pointed peppers
- 2 red onions
- 300 grams of chicken thigh fillets
- 1 teaspoon paprika powder
- 1 teaspoon oregano
- 1 teaspoon cumin powder
- 1 teaspoon garlic powder
- Chili powder to taste
- 2 tablespoons olive oil
- 8 small or medium wraps
- 2 avocados
- Salt and pepper
- Options for topping:
- tomato salsa
- sour cream
- fresh cilantro
- oregano

- Preheat the oven to 180 degrees Celsius and line a baking tray with parchment paper.
- Remove the seeds from the bell peppers and cut the flesh into rings. Cut the onions into quarters and then into slices.
- Cut the chicken thighs into strips about 2-3 cm thick.
- In a bowl, mix the paprika powder with oregano, cumin powder, garlic powder, and chili powder to taste.
- Spread the bell peppers, red onion, and chicken thigh strips on the baking tray. Drizzle the olive oil over them, then sprinkle with the spice mix. Mix everything together well.
- Roast the vegetables and chicken in the oven for 20 minutes until golden brown and cooked.
- Meanwhile, prepare the wraps according to the package instructions. Cut the avocados into cubes.
- Serve the wraps with the roasted vegetables and chicken, and the avocado cubes. Garnish as desired with tomato salsa, sour cream, and/or fresh herbs.
