
Roasted radish salad with pesto dressing
Did you know that you can roast radishes in the oven? AND that they then lose their characteristic bitter taste? Ideal if you are not a fan of bitterness. But even if you can appreciate that slightly bitter taste, this method is one to try. In fact, roasted radishes taste like a very light potato, which is not surprising since radishes are tubers, just like potatoes. Roast them as a substitute for potatoes or make a salad like this one. Combine the roasted radishes with avocado, lamb's lettuce, and a pesto dressing and you have a deliciously different salad in no time!

- 1 bunch of radishes
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp Italian herbs
- 2 tbsp olive oil
- 1 avocado
- 75 g lamb’s lettuce blend
- Black sesame seeds for garnish
- Salt and pepper
- 1 tbsp pesto
- 1 tbsp sour cream
- 1 tbsp lemon juice
- 1 tbsp extra virgin olive oil

- Preheat the oven to 200 degrees and line a baking tray with baking paper.
- Remove the foliage and top and bottom from the radishes and halve them. Mix them in a bowl with the garlic powder, onion powder, Italian herbs, olive oil, and salt and pepper. Then spread them on the baking tray and roast them in the oven for 20 - 25 minutes until soft and slightly golden brown.
- In the meantime, mix the ingredients for the dressing. Cut the avocado into slices.
- Mix half of the pesto dressing through the lettuce and divide the lettuce over 2 plates. Top with the avocado slices and roasted radishes. Garnish with black sesame seeds and serve the rest of the dressing on the side.
