Ingredients
  • 200 g frozen spinach
  • 2 eggs
  • 100 g panko
  • 50 g grated Parmesan cheese
  • Generous pinch of dried garlic
  • Generous pinch of chilli flakes
  • 1 tbsp dried oregano
  • 10 sprigs of chives
  • Salt and pepper
Dressing ingredients
  • For the homemade tomato salsa:
  • 100 g cherry tomatoes
  • 1 garlic clove
  • 2 sprigs fresh mint
  • 1 small red onion (or half)
  • 1 tbsp extra virgin olive oil

Preparation
  • Preheat the oven to 200 degrees and line a baking tray with baking paper.
  • Defrost the frozen spinach and place the defrosted spinach in a colander. Squeeze out most of the water.
  • Then put the spinach in a bowl and add the eggs, panko, Parmesan cheese, dried garlic, chilli flakes, and oregano. Cut or trim the chives finely and add to the bowl. Season with salt and pepper. Stir well.
  • With dampened hands form 10 – 12 balls from the mixture, slightly smaller than a golf ball. Place them on the lined baking tray and bake in the preheated oven for 25 minutes.
  • While these are baking, place the cherry tomatoes, garlic, mint leaves, red onion, olive oil, and salt and pepper in a food processor and blend into a salsa. If the homemade salsa is a little too wet, pour out the excess moisture.
  • Serve the spinach balls with the salsa.
