Herring and potato salad
The wind whistles past my ears as I scramble to stop the car door blowing off its hinges. It’s October in Iceland and the first “real” wintry days have hit the island, as the last of the sheep are mustered from the highlands before the snow sets in.This potato salad, served with herring, is a favourite among the locals and one which I really enjoyed during my visit.
