
Watermelon and spinach salad

- 3 cups cubed watermelon
- 200g baby spinach
- 1 cup fresh sliced mushrooms
- 100g feta cheese
- 400g diced bacon cooked
- Salt and pepper to taste
- 1/3 cup red wine vinegar
- 3 tbspns extra virgin olive oil

1. Place all dressing ingredients in blender and process until smooth. Place aside. 2. In a large bowl, place spinach, watermelon, bacon, mushrooms and cheese. 3. Add dressing to bowl and gently fold into salad ingredients. 4. Serve.
