
Grilled peach salad with prosciutto and yogurt dressing
Have you ever grilled peaches before? Grilling brings out their natural juiciness and intensifies their deep summer sweetness. These sweet grilled peaches go very well with salty prosciutto and the crunchy melange of Salanova leaves and mint.

- 3 fresh peaches, cut into wedges
- 100 gr mixed leaves (Salanova melange)
- 8 slices of prosciutto
- 3 sprigs of fresh mint, leaves in strips
- olive oil
- 4 tbsp yogurt
- ½ tbsp olive oil
- 1/2 red pepper, finely chopped
- ½ tbsp honey

- Mix the dressing ingredients and put aside.
- Meanwhile, heat a grill pan or barbecue. Brush the peach wedges with olive oil, then grill the peach on each side (about 1 minute).
- Divide the lettuce over the plates and place the peach wedges, prosciutto and mint on top.
- Toss with salad with yoghurt dressing and serve immediately.
