Make your own kids cucumber spread sandwich

These sandwiches are healthy, tasty and the fun part is, you can prepare them together with your toddler(s).

Ingredients
  • 1 large cucumber
  • 1 1/2 cups Greek yogurt
  • 2 tbsp extra virgin olive oil
  • 1 tbsp minced fresh parsley
  • slices of bread (as many as you like)
  • optional: raspberries and blue berries for decoration

Preparation
  • Grate half of the cucumber and drain through a fine mesh sieve for half an hour.
  • Combine the yogurt, oil in a large bowl.
  • Transfer the grated cucumber and fresh parsley to the yogurt mixture and stir to combine.
  • Use the other half of the cucumber for thin slices.
  • Make your sandwich with the spread, the cucumber slices, raspberries and blue berries
