
Rice salad with lettuce and anchovies
Find out how to transform leftover rice into a delicious Mediterranean salad.

- 250 gr rice
- 1 large beef tomato
- 24 black olives, pitless
- 8 anchovy fillets
- 1 fennel
- 6 sprigs of flat-leaf parsley, chopped
- 2 eggs, hard boiled
- 2 cloves of garlic
- 1/2 red pepper
- 1/2 head of lettuce
- 1/2 carrot
- 6 Tbs extra virgin olive oil
- juice of 1 lemon

Remove from the heat, allow to cool and mix together with the rice.Cut tomato, fennel, carrotand olives in small dices and add to the rice mixture.
Season to taste with parsley, salt, pepper and lemon juice.
Wash and dry the lettuce. Arrange lettuce and rice on 4 plates and garnish with half an egg each.
Make a little bit more, and you will have a great lunch for the next day. Double leftover fun ;-)
