
Goat cheese salad with honey, mustard and pistachio dressing
I love this salad because the ingredients are very simple and it is very easy to prepare. Moreover it is an excellent combination of flavours and textures. My little daughter loves this salad because we decorate it and have lots of fun making it together.

- 100g mesclun (salad leaf mix)
- 100g corn salad (mâche or lambs lettuce)
- 6 cherry tomatoes
- A little orégano
- 6 slices of goat cheese
- Some pine nuts (lightly roasted)
- 2 tablespoons of sweet corn kernels
- 1 onion (chopped and fried)
- A spoonful of mustard Dijon
- A spoonful of honey
- Extra virgin olive oil
- Jerez vinegar (Sherry vinegar)
- Handful of pistachios (lightly roasted & crushed)

I recommend that you pan-fry the tomatoes in a little oil and a bit of oregano just for a few minutes - it brings out the flavour, although you can also choose to just add the tomatoes without cooking. Separately, lightly roast for just a minute or two, the pine nuts and pistachios - then set aside to cool. Place your mesclun (salad leaf mix) and the corn salad into a bowl, then add the sweet corn and the pine nuts. Next add the tomatoes and the slices goat cheese into the bowl. Depending on the cheese you choose, it is also nice to pan-fry the slices of cheese for a few minutes. Prepare the dressing: In a bowl, put the mustard, honey, pistachios. Then add oil and vinegar. Drizzle over the salad just before serving.
This is a salad for two people to share as a starter.
