
Fennel salad with shrimp, avocado and dill
I love to make salads with fennel. They pair great with shrimp. And shrimps pare great with avocado. In my opinion these ingredients make a brilliant salad together. And the great part, it's ready in a couple of minutes. I like to combine this fennel salad with a nice piece of crusty bread.

- 100 gram cooked and cleaned shrimp
- 1 fennel (thinly sliced)
- 1 avocado in slices
- juice of one lemon
- 2 tbsp of mayonaise
- 15 gr of dill, chopped
- optional 15 gr of garden cress for garnish

- Start with the dressing. Whisk mayonaise, lemon juice and dill in a big bowl.
- Add the shrimp and whisk again.
- Gently add the fennel and avocado and make sure the dressing is mixed throhugh the salad.
- Serve the salad on plates and garnish with some garden cress.
