
Bread and butter pickles
Whilst most cucumbers are enjoyed fresh, preparing them in this way can add more flavours to salad recipes. They are visually impressive too.

- 5 Lebanese (midi) cucumbers thinly sliced
- 2 shallots or small Spanish onions thinly sliced
- 1 tablespoon salt
- 1½ cup white wine vinegar
- 1 cup sugar
- 2 teaspoon mustard seeds
- 2 teaspoons white peppercorns
- 1 pinch turmeric

Toss cucumber, shallot and salt to combine.
Leave for at least 1 hour then rinse, strain and pat dry.
Place remaining ingredients in a pot and bring to the boil. Add cucumber, bring back to the boil then remove from heat. Transfer to a clean, dry container.
For best results, do not use for at least one day to allow flavours to fully develop.
