
Watermelon and feta salad with zaatar
This refreshing salad will make your taste buds dance with joy.

- 1/4 watermelon cut into cubes
- Large handful of pinenuts
- 100g feta cheese cubed
- 1/2 to 1 tsp of zaatar
- Handful of baby spinach
- 1/2 lebanese cucumber sliced
- 1 tbsp pomegranate molasses
- 2 tsp rosewater
- 2 tbsp olive oil

1. Toast pinenuts in a dry saucepan, stirring constantly until golden brown - take off heat.
2. Combine watermelon, feta, spinach and cucumber, toss gently.
3. Add dressing.
4. Sprinkle with zaatar.
5. Sprinkle with pinenuts.
Please note: Zaatar is a middle eastern spice made from sumac, sesame seeds, marjoram, oregano and sea salt. Pomegranate molasses is available at delicatessens or from shops with a middle-eastern influence.
