
Speedy Waldorf Salad
The Waldorf Salad first gained popularity in the 19th century at the Waldorf Astoria Hotel in New York. Made with simple ingredients, this classic salad makes a great lunch or brunch dish. The addition of tarragon to the yoghurt dressing will give a lovely fresh flavour.

- 2 tbsp natural yoghurt
- 1 tsp wholegrain mustard
- Small bunch of fresh tarragon, finely chopped
- Small bunch of fresh tarragon, finely chopped
- 30g walnuts
- 2 sticks celery
- 1 crisp eating apple
- 100g red grapes
- 1 Cos lettuce, leaves separated

- Start by making the dressing, combine the yoghurt, mustard, tarragon and seasoning.
- Toast the walnuts in a dry frying pan. Slice the celery, apple and grapes. Toss together the toasted walnuts, celery, apple, grapes and Cos lettuce leaves in a large bowl.
- Drizzle the dressing over the salad and serve.
