
Couscous salad with green peas, capsicum, orange and mint
This recipe uses couscous as a tasty and nourishing base ingredient, with the addition of red capsicum (pepper), cucumber, peas and orange slices giving the salad a burst of crunch and colour. Sping onions, fresh mint and pistachios bring bold and unique flavours to the mix, making this salad a little more special.

- 250g couscous
- 1 red capsicum (sweet pepper)
- Half a cucumber
- 1 orange
- 2 spring onions
- A few sprigs of fresh mint
- 1 handful pistachio nuts
- 1 handful peas (fresh or frozen)
- Salt and pepper
- 3 tablespoons olive oil
- 1 tablespoon lemon juice

- Prepare couscous according to packet instructions
- Lightly blanch the peas in hot water (for roughly 90 seconds)
- Chop the peppers and cucumber into small pieces
- Peel and slice the orange into bite-sized pieces
- Finely slice the mint and spring onions
- Combine all ingredients together in a large serving bowl
- For the dressing, whisk together the olive oil and lemon juice
- Add a sprinkling of pistachio nuts and pour the dressing over the salad
- Season with salt and pepper
