The vegetable kebabs you need to try at your next barbecue

- 6 cocktail truss tomatoes
- 10 basil leaves
- 15 mini balls of mozzarella
- Salt and pepper
- 2 tbsp balsamic vinegar
- 1 tbsp of extra virgin olive oil
- 4 skewers
- Cut the tomatoes in half.
- Thread the ingredients onto the stick, alternating with a tomato half, a mozzarella ball and a basil leaf. Repeat process for each of the kebabs.
- Mix together the balsamic vinegar, olive oil, salt and pepper in a bowl.
- Arrange the skewers on a plate and finish with a light drizzle of the dressing.
This recipe makes 4 kebabs so if your aim is to entertain, double the quantities of ingredients. If you love the idea of veggie kebabs and want more variety, try experimenting with cucumber, apple, capsicum, tomato and onion.
