Preparation
  • Preheat the oven to 200 degrees.
  • Cut the leeks into halves, lengthwise.
  • Pop the leeks in the oven with a little butter or olive oil for a few minutes, then pour a small amount of water into the dish (the leek doesn’t have to be completely submerged). After that, stew the leek al dente (firm to the bite) for around 5 minutes and then drain.
  • In the meantime, fry the bacon for approximately 5 minutes, then place on a paper towel to allow any excess oil to be absorbed.
  • Beat the eggs well with the crème fraiche until the mixture is smooth.
  • Use a large baking sheet lined with parchment paper and place the puff pastry on it. Prick all over with a fork and then spread the crème fraiche thickly across the pastry.
  • Divide the leeks and bacon over the puff pastry, season with salt and pepper to taste and place it in the preheated oven for 15-20 minutes. The pastry should be golden brown.
  • OPTIONAL: add some grated cheese and rosemary on top of the quiche before it goes in the oven.

Enjoy!
