5 tips for eating more vegetables

With a busy life and lots of potential distractions, we don’t always incorporate enough vegetables in every meal. We have compiled five tips that improve our awareness of nutrition and help us add vegetables to your daily life in a fun and delicious way. Read on!

1. Start with a good breakfast

There are plenty of opportunities to eat vegetables at breakfast. You can make toast with leftover roasted vegetables from the night before, like peppers and cherry tomatoes, cucumber slices, cottage cheese (or tofu), diced avocado, and a sprinkle of flax seed. Delicious! If you want something more substantial, you can make a vegetable omelet with grated courgette or other sautéed vegetables (you can use a pre-mixed mix from a bag for ease!). There are also lots of delicious breakfast salads that you can whip up in no time.

2. Add vegetables to your sandwich

A regular sandwich becomes a great sandwich when you add vegetables: creamy avocado, crisp lettuce, juicy cherry tomatoes, and cucumber slices.

3. A salad for lunch

A complete salad is, in our opinion, the best way to have lunch. You can have a different salad for lunch every day, the options are endless and it's a light and nutritious meal. You can vary it many types of vegetables (cucumber, spinach, lettuce, celery, tomatoes, peppers, etc.) and legumes (lentils, beans, chickpeas, etc.), grains (spelt, quinoa, etc.), pasta, rice, cheeses, fish, or chicken.

4. Dipping with vegetables

This is a new trend that's becoming increasingly popular, and houmous is the king of dips. Again, you can vary it endlessly. How about adding beetroot or roasted peppers to your houmous?

5. Drinking vegetables

Mid-morning or in the afternoon, you might crave something between meals, and what could be better than a super-fresh and healthy fruit and vegetable smoothie? Spinach and raspberries or cucumber and kiwi. Yum!
