Vegetable fries with Greek topping

Are we fans of vegetable fries or not? We definitely are! Fries are already delicious, but you can easily replace the potatoes with vegetables to get more veggies in your diet. That's exactly what we do with this recipe. We replace the potatoes with carrots and sweet potatoes (but you can also use parsnips or bell peppers, for example). To make it even tastier, we top the fries with olives, lettuce, and cherry tomatoes. So, this recipe is almost entirely made of vegetables! Want to add a little extra? Think about roasted chickpeas, grated cheese, or pulled chicken – anything goes!

Ingredients
  • 600 grams (yellow) carrots
  • 600 grams sweet potatoes
  • 3 tablespoon oil
  • 250 grams (colored) cherry tomatoes
  • 75 grams olives
  • 100 grams Romaine lettuce
  • Garlic sauce to taste
  • Salt and pepper

Preparation
  • Preheat the oven to 220 degrees Celsius and line a baking sheet with parchment paper.
  • Cut the carrots and sweet potatoes into fries. You can parboil the carrot fries for 5-7 minutes in a pot of water. Drain and let them dry. Spread them out on the baking sheet, drizzle with 3 tablespoons of oil, and season with salt and pepper. Roast the vegetables for 15–20 minutes in the oven. Prefer not to parboil? Then bake the vegetables for at least 25 minutes in the oven.
  • Quarter the cherry tomatoes and slice the olives into rings. Cut the Romaine lettuce into strips.
  • Divide the vegetable fries onto plates and top with cherry tomatoes, olives, and Romaine lettuce. Garnish with garlic sauce to taste. Serve immediately.
  • Fan of cheese? Sprinkle some grated cheese over the vegetable fries.
