
Sicilian couscous salad with aubergine, capers and pistachios
Sicily is a region strongly linked to food, for this Sicilian salad recipe we chose the typical couscous to show the link with the Arab world and to use aubergine, queen of Sicilian cuisine and star of many typical dishes.

- 2 medium aubergines
- 3 tbsp of raisins
- 1,5 tbsp of capers
- 1 tbsp of almonds
- 1 tbsp of pistachios
- 1 clove of garlic, chopped
- 450 ml of vegetable broth
- Fresh herbs like parsley, basil and mint
- extra virgin olive oil
