
Fresh tomato sauce for pasta
There is something special about creating your own home made tomato sauce. Enjoy making this easy recipe.

- 500g of vine tomatoes
- 50g of Italian herb mix
- 1 large onion
- 300g of mince (meat, chicken or lentils)
- 2 tbsp of olive oil

Finely chop the onion and cut the tomatoes into small chunks. Heat the olive oil in a casserole and stir fry the mince for about 4 minutes breaking up any lumps and until brown. Add the chopped onions and stir fry for 3 minutes until they start to colour. Add the chopped tomatoes and simmer for 5 minutes. Add the herb mix and 50 ml of water and bring the sauce to the boil, continuously stirring. Cover the pan and leave the sauce to simmer for approx. 10 minutes.
Serve the fresh tomato sauce with the cooked pasta of your choice and sprinkle with grated cheese.
Tip: Prefer a sauce without tomato skins? Here’s how to peel them easily: score the tomatoes across the base in a cross fashion. Drop them in boiling water for a few minutes until the skin comes loose, next dip the tomatoes in cold water and peel the skin off.Prefer vegetarian: Substitute the mince meat with a can of cooked lentils.
